Banana Crumb Muffins




What You Need:

1 1/2 C flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
3 mashed bananas
1/2 C sugar
1 lightly beaten egg
1/3 C melted dairy free, soy free butter
1/3C packed brown sugar


Topping

2 TBSP flour
1/8 tsp cinnamon
1 TBSP dairy free, soy free butter


Directions:

Preheat oven to 375 degrees. Lightly spray pan with canola oil.

In a large bowl, mix together mix flour, baking soda, baking powder and salt. Add in egg, sugar, bananas and melted butter. Stir until all ingredients are mixed together. Spoon batter into prepared pan.

In a small bowl, mix together brown sugar, flour, and cinnamon. Mix in butter until the mixture resembles coarse cornmeal. Sprinkle topping over batter.

Bake for 18-20 minutes.
