A great recipe to use up ripe bananas. We are lucky if they last two days around this house.
What you need
1 tsp cinnamon
1 tsp baking soda
1/2 tsp sea salt
3 mashed bananas
1 egg (or egg replacement)
1 TBSP coconut milk (or another alternative)
1 tsp vanilla
1C dairy-free, soy-free chocolate chips (we use Enjoy Life)
In a mixing bowl, combine flour, sugar, cinnamon, baking soda and sea salt. Add bananas, oil, eggs, coconut milk and vanilla. Mix until well blended. Stir in chocolate chips.
Next drop even amounts of batter on well greased baking sheets.
Bake at 375 degrees for 11-13 minutes or until edges begin to brown.
